Ingredients

Muffins

  • 2 cups Whole Wheat Flour
  • 2 large Bananas (ripe)
  • 2 Eggs
  • 1/4 cup Preferred Milk
  • 1/4 cup Coconut Oil (melted)
  • 1/4 cup Honey
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 + 1/2 tsp Cinnamon
  • Pinch Salt

Crumble

  • 1/3 cup Almond Flour
  • 2 tbsp Coconut Flour
  • 1 + 1/2 tbsp Coconut Oil
  • 1 tbsp Honey
  • 1 tsp Vanilla
  • 1 tsp Cinnamon

Instructions

  • Preheat oven to 350 degrees F
  • In a medium bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon and salt.
  • Mash the 2 bananas with a form until a smooth consistency, some lumps are okay.
  • In a small bowl, combine bananas, eggs, milk, coconut oil, and honey.
  • Add wet ingredients to dry ingredients and mix until just combined.
  • In a separate bowl, combine the crumble ingredients until the consistency is slightly clumpy.
  • Pour batter into muffin tins and top with desired amount of crumble.
  • Bake for 25 minutes or until the top is golden brown and a toothpick comes out clean from the center.
  • Serves 10, enjoy!
