Ingredients

Cookie

  • 1/2 cup @bobsredmill Paleo Mix Flour or 1/2 cup almond flour + 2 tbsp coconut flour
  • 1/2 cup Cacao Powder
  • 1/3 cup Coconut Sugar
  • 1/4 tsp Baking Soda
  • 1/4 cup Milk
  • 3 tbsp Coconut Oil, melted

Filling

  • 2 scoops Vanilla @f_factor 20/20 powder
  • 1/3 cup Milk
  • 2 tbsp Coconut Oil

Instructions

Cookie

  • Combine dry ingredients in a medium sized bowl, set aside
  • Combine wet ingredients in a separate bowl
  • Add the wet ingredients to the dry and mix to form the dough
  • Chill in the refrigerator for 30 minutes.
  • Using a ½ tablespoon, scoop out the dough and roll into balls. Place on a greased baking sheet.
  • Flatten the balls into oreo sized cookies.
  • Bake cookies at 325 degrees F for 15-20 minutes
  • Allow cookies to cool completely before adding the filling.
  • Store in the refrigerator.

Filling

  • Using a hand mixer, whip all ingredients together on low speed, and work up to a higher speed
  • Place in the fridge to chill until ready to use.
