Ingredients
Muffins
- 2 cups Whole Wheat Flour
- 2 large Bananas (ripe)
- 2 Eggs
- 1/4 cup Preferred Milk
- 1/4 cup Coconut Oil (melted)
- 1/4 cup Honey
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1 + 1/2 tsp Cinnamon
- Pinch Salt
Crumble
- 1/3 cup Almond Flour
- 2 tbsp Coconut Flour
- 1 + 1/2 tbsp Coconut Oil
- 1 tbsp Honey
- 1 tsp Vanilla
- 1 tsp Cinnamon
Instructions
- Preheat oven to 350 degrees F
- In a medium bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon and salt.
- Mash the 2 bananas with a form until a smooth consistency, some lumps are okay.
- In a small bowl, combine bananas, eggs, milk, coconut oil, and honey.
- Add wet ingredients to dry ingredients and mix until just combined.
- In a separate bowl, combine the crumble ingredients until the consistency is slightly clumpy.
- Pour batter into muffin tins and top with desired amount of crumble.
- Bake for 25 minutes or until the top is golden brown and a toothpick comes out clean from the center.
- Serves 10, enjoy!
