Lemon Herb Butter Pasta



  • 2 Lemons
  • 1 tbsp EVOO
  • 4 tbsp Butter or Ghee
  • 2 Zucchini
  • Handful Cherry Tomatoes
  • Rosemary, Thyme, Basil and Oregano to taste
  • Salt, Pepper and Garlic Powder to taste


  • Cook pasta as instructed
  • Drain pasta but reserve ¼ cup of the pasta water and set aside.
  • Cook the spring veggies (zucchini, cherry tomatoes, or anything you have on hand) in EVOO with the herbs and spices, until slightly softened.
  • Add butter and the juice of two lemons to the pasta and mix to evenly coat.
  • Add the veggies to the pasta and top with fresh basil if desired. Enjoy!
