Lemon Herb Butter Pasta

Ingredients
- 2 Lemons
- 1 tbsp EVOO
- 4 tbsp Butter or Ghee
- 2 Zucchini
- Handful Cherry Tomatoes
- Rosemary, Thyme, Basil and Oregano to taste
- Salt, Pepper and Garlic Powder to taste
Instructions
- Cook pasta as instructed
- Drain pasta but reserve ¼ cup of the pasta water and set aside.
- Cook the spring veggies (zucchini, cherry tomatoes, or anything you have on hand) in EVOO with the herbs and spices, until slightly softened.
- Add butter and the juice of two lemons to the pasta and mix to evenly coat.
- Add the veggies to the pasta and top with fresh basil if desired. Enjoy!
