Ingredients
Bowl
- 1 cup Brown Rice, cooked
- 1/2 cup Purple Cabbage, shredded
- 1/3 cup Mushroom, chopped
- 1/3 cup Baby Carrot, chopped
- Handful Kale
- 2 tbsp Avocado Oil
- 1/2 tbsp Garlic, minced
Thai Peanut Sauce
- 2 tbsp Coconut Aminos
- 1 tbsp Sesame Oil
- 2 tbsp Crunchy Peanut Butter
- 1/4 cup Water
Instructions
- Cook rice according to package instructions
- Chop the cabbage, mushroom, carrot and kale
- Saute the veggies in the avocado oil until the veggies are tender- approximately 15 minutes. Add the garlic when the veggies are halfway done cooking to prevent the garlic from burning.
- Combine all sauce ingredients in a small bowl.
- Add the cooked brown rice to the veggies and mix.
- Pour sauce over everything and mix.
- Let it all steam together in the pan for approximately 10 minutes.
- Plate and enjoy!
Notes
You can add any protein that you would like! Chicken and tofu work great, and you could also sub the brown rice for quinoa!
