30 Minute Nourish Bowl

Ingredients

Bowl

  • 1 cup Brown Rice, cooked
  • 1/2 cup Purple Cabbage, shredded
  • 1/3 cup Mushroom, chopped
  • 1/3 cup Baby Carrot, chopped
  • Handful Kale
  • 2 tbsp Avocado Oil
  • 1/2 tbsp Garlic, minced

Thai Peanut Sauce

  • 2 tbsp Coconut Aminos
  • 1 tbsp Sesame Oil
  • 2 tbsp Crunchy Peanut Butter
  • 1/4 cup Water

Instructions

  • Cook rice according to package instructions
  • Chop the cabbage, mushroom, carrot and kale
  • Saute the veggies in the avocado oil until the veggies are tender- approximately 15 minutes. Add the garlic when the veggies are halfway done cooking to prevent the garlic from burning.
  • Combine all sauce ingredients in a small bowl.
  • Add the cooked brown rice to the veggies and mix.
  • Pour sauce over everything and mix.
  • Let it all steam together in the pan for approximately 10 minutes.
  • Plate and enjoy!

Notes

You can add any protein that you would like! Chicken and tofu work great, and you could also sub the brown rice for quinoa!
