Saute the veggies in the avocado oil until the veggies are tender- approximately 15 minutes. Add the garlic when the veggies are halfway done cooking to prevent the garlic from burning.
Combine all sauce ingredients in a small bowl.
Add the cooked brown rice to the veggies and mix.
Pour sauce over everything and mix.
Let it all steam together in the pan for approximately 10 minutes.
Plate and enjoy!
Notes
You can add any protein that you would like! Chicken and tofu work great, and you could also sub the brown rice for quinoa!
