Creamy Cauliflower Alfredo

Ingredients

  • 1 half Head of Cauliflower, broken into florets
  • 1/4 cup Olive Oil (I used truffle olive oil)
  • 1/4 cup Preferred Milk
  • 1/4 cup Nutritional Yeast
  • 1 tbsp Minced Garlic

Instructions

  • Boil cauliflower florets until fork tender and strain
  • Add the cauliflower florets, olive oil, milk, nutritional yeast and minced garlic to a blender and blend until smooth.
  • Season to taste with salt and pepper, if desired
  • Pour over cooked pasta and pair with your favorite veg and protein!
